Ingredients
Instructions
- 1
In a large skillet or wok, heat the diabetic safe butter over medium-high heat.
- 2
Add the sliced onion and minced garlic, and sauté for about 2 minutes until the onion becomes translucent.
- 3
Add the ground beef to the skillet. Cook, breaking it apart with a spatula, until it’s browned and fully cooked (about 5-7 minutes). Season with salt and pepper.
- 4
Stir in the julienned carrot and cook for another 2-3 minutes until the carrot is tender.
- 5
Next, add the spinach. Cook for an additional minute or two until the spinach has wilted.
- 6
If you are using soy sauce or any other sauce, drizzle it over the stir-fry at this point for extra flavor. (You can skip this if you're keeping it simple!)
- 7
If you like a bit of crunch, add the sliced cucumber just before serving, allowing it to retain its freshness.
- 8
Serve the stir-fry hot over cooked rice or on its own as a low-carb option.
This stir-fry is a delightful way to enjoy a mix of vibrant vegetables and savory ground beef, all tossed together in a delicious sauce. It's perfect for a weeknight dinner when you're short on time but still want something wholesome!
