Instructions
- 1
Preheat your oven to 350°F (175°C).
- 2
In a large skillet, heat a little olive oil over medium heat. Add the diced raw chicken thighs and cook for about 5-7 minutes, until they're starting to brown.
- 3
Add the frozen mixed peppers, onions, broccoli, cauliflower, and sweet corn to the skillet. Stir well and cook for another 5-7 minutes until everything is heated through and the chicken is fully cooked.
- 4
Stir in the ricotta cheese, Worcestershire sauce, soy sauce, garlic powder, onion powder, paprika, salt, and pepper. Mix well, cooking for another 2 minutes until the mixture is creamy and well combined.
- 5
Take a tortilla wrap and spoon some of the chicken and veggie mixture in the center. Fold in the sides and roll it up tightly. Repeat with the remaining wraps.
- 6
Place the wraps seam-side down in a baking dish. Drizzle with a little olive oil.
- 7
Bake in the preheated oven for about 10-12 minutes, until the wraps are warm and slightly crispy.
- 8
Serve with a dollop of Greek yogurt on the side for that extra creaminess!
This recipe brings together tender chicken and colorful veggies all wrapped up in a delicious, warm tortilla. It's easy to make and packed with flavor!
Flavor Profile
These wraps offer a savory and creamy combination that comes from the rich ricotta and tender chicken. The sautéed vegetables maintain their freshness, while the Worcestershire and soy sauces provide a rich umami flavor. The spices add warmth without the spice, making each bite deliciously comforting.
