Hearty Beef and Veggie Bake

Ingredients

• 1 cup vegetable-infused minced beef base (from your ingredients)
• 1 cup frozen peas
• 1 cup frozen cauliflower florets
• 1 cup frozen broccoli florets
• 1 cup frozen sprouts
• 1 cup frozen sweet potato chunks
• 1 cup frozen mixed peppers
• 1 tin (400g) chopped tomatoes
• 1 cup ricotta cheese
• Salt and pepper to taste
• 1 tablespoon Worcestershire sauce
• 1 tablespoon soy sauce
• Olive oil for drizzling
• 2 cups red lentil pasta (or your choice of pasta)

Instructions

1. Preheat your oven to 180°C (350°F).
2. Cook the red lentil pasta according to package instructions until al dente. Drain and set aside.
3. In a large oven-safe skillet or baking dish, combine the vegetable-infused minced beef base, frozen peas, cauliflower, broccoli, sprouts, sweet potato, mixed peppers, and chopped tomatoes. Mix well.
4. Stir in the Worcestershire sauce, soy sauce, and season with salt and pepper to taste.
5. Gently fold in the cooked pasta into the veggie and beef mixture until well combined.
6. Spread the ricotta cheese evenly on top of the pasta mixture. Drizzle with olive oil for extra flavor.
7. Bake in the preheated oven for about 25-30 minutes, or until heated through and the top is slightly golden.
