Prep the Ingredients: Wash and cut all your vegetables and sausage into ½-inch cubes. Set aside.
Heat the Pan: In a large skillet or wok, heat the oil over medium-high heat.
Cook the Sausage: Add the cubed pork sausage to the skillet. Cook for about 3-4 minutes until browned.
Add the Aromatics: Add the cubed onion to the skillet and sauté for another 2 minutes until translucent.
Stir in the Veggies: Add bell peppers and mushrooms to the pan. Stir-fry for about 5 minutes until the peppers are tender but still crisp.
Finish with Sauce: Add the soy sauce, sweet and spicy sauce, Worcestershire sauce, and Tabasco (if using). Cook for another 2-3 minutes to heat everything through, stirring well to combine.
Season: Taste your stir-fry; add salt and pepper as needed.
Serve: Remove from heat and serve hot, either on its own or over a bed of warm cooked rice.
