Preheat your oven to 375°F (190°C).
In a mixing bowl, combine the chopped sun-dried tomatoes, spinach, ricotta cheese, Parmesan cheese, minced garlic, dried oregano, dried basil, salt, and pepper. Mix well to create the stuffing.
Carefully butterfly the chicken breasts by slicing horizontally through the center, leaving one edge intact, to form a pocket.
Stuff each chicken breast with the spinach and sun-dried tomato mixture, dividing it evenly among the breasts.
Secure the openings of the chicken breasts with toothpicks to keep the stuffing inside.
Season the outside of the chicken breasts with salt, pepper, and a sprinkle of dried oregano.
Heat a skillet over medium-high heat with a drizzle of olive oil. Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
Transfer the skillet to the preheated oven and bake for about 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Once cooked, allow the chicken to rest for a few minutes before serving.
