Ingredients
Instructions
- 1
Prep fish:
- 2
Pat fillets dry. Season with salt, pepper, garlic powder, smoked paprika, and lemon juice. Let rest while you make batter and chips.
- 3
Make low-carb batter:
- 4
In a bowl combine almond flour, coconut flour, Parmesan (if using), and baking powder. Whisk egg and sparkling water; add to dry ingredients and mix to a smooth, thick batter. If too thick, add a splash more sparkling water. Batter should coat the back of a spoon.
- 5
Prepare chips:
- 6
Preheat oven to 425°F (220°C). Peel rutabagas/turnips (or rinse radishes) and cut into thin "chip" slices or matchsticks. Toss with 2 tbsp olive oil, 1/4 cup Parmesan, dried herbs, salt, and pepper. Spread in a single layer on a parchment-lined baking sheet.
- 7
Roast 20–30 minutes, flipping once, until golden and tender (radishes take 15–20 minutes). For extra crispness, broil 1–2 minutes at the end—watch closely.
- 8
Fry the fish:
- 9
Heat 2–3 tbsp oil in a skillet over medium-high until shimmering. Pat fish lightly with extra almond flour (optional) to help batter adhere. Dip each fillet into the batter to coat fully, letting excess drip off.
- 10
Carefully place fillets in hot oil. Fry 3–4 minutes per side (depending on thickness) until batter is golden and fish flakes easily (internal temp ~145°F/63°C). Work in batches if needed. Drain on paper towel-lined plate.
- 11
Alternatively, shallow-fry in a nonstick pan with 1/4–1/2 inch oil, or air-fry at 400°F (200°C) for ~10–12 minutes, flipping halfway (spray with oil for browning).
- 12
Tartar sauce:
- 13
Mix mayonnaise, chopped pickles, lemon juice, Dijon, salt, and pepper.
- 14
Plate and serve:
- 15
Serve hot fish with roasted turnip/ratpabag or radish chips, lemon wedges, and tartar sauce.
- 16
Golden, savory crust with a tender, flaky interior; chips carry a nutty, earthy roasted flavor with herb and Parmesan notes; bright, tangy tartar sauce cuts richness.
- 17
Almond/coconut flour batter replaces wheat flour, keeping carbs low. Turnips or radishes are much lower-carb alternatives to potatoes; using full-fat mayo and moderate frying provides keto-friendly fats and satiety.
A keto-friendly riff on classic fish and chips: flaky beer-battered-style fish using a low-carb batter and crispy roasted turnip chips (or parmesan-crusted radish chips). As Dr. Kobe Keto, I created this to keep the crunchy comfort of the original while staying keto.
