Heat a large wok or heavy skillet over medium-high heat. Add 1 tablespoon oil. When shimmering, pour in the beaten eggs and scramble quickly into soft curds. Transfer eggs to a bowl and set aside.
Add another tablespoon oil to the pan. Add the diced pork and spread into a single layer. Let it sit 1–2 minutes to get a little color, then toss until warmed through and lightly caramelized. Transfer pork to the bowl with the eggs.
Add the remaining tablespoon oil. Toss in the minced garlic and the white parts of the scallions; stir 20–30 seconds until fragrant but not browned.
Add the thawed mixed veggies and diced pineapple. Stir-fry 1–2 minutes until the pineapple starts to caramelize and the veggies are heated through.
Increase heat to high, add the cold rice, and stir-fry energetically — break up any lumps and make sure every grain gets a kiss of heat. Keep the rice moving so it fries instead of steams.
Return the pork and eggs to the pan. Pour in the soy sauce, oyster sauce (if using), rice vinegar, and sprinkle the sugar over the rice. Toss everything together for 1–2 minutes so the flavors marry. Finish with the toasted sesame oil (a little goes a long way). Taste and adjust with salt and pepper.
Stir in the green parts of the scallions and fold in your chosen crunch substitute (peanuts/cashews or fried shallots) right at the end so they stay crisp. If using scallion greens, scatter them on top before serving.
