Instructions
- 1
**Prep the stuffing:**
- 2
In a sauté pan, melt 1 tablespoon of butter over medium-high heat. Add the diced onions and sauté for 2 minutes, then add the celery and cook for another 2 minutes. Finally, add the mushrooms and sauté until their juices evaporate and the mixture is dry.
- 3
Add the ground chicken, liverwurst, chopped bacon, thyme, green onions, red wine, nutmeg, salt, and pepper to the pan. Mix well and let cool slightly.
- 4
**Preheat the oven:**
- 5
Preheat your oven to 400°F (200°C).
- 6
**Prepare the quail:**
- 7
On a baking sheet, crumple a large sheet of foil to create shallow "nests" for the quail.
- 8
Pat the quail dry with a paper towel, then season the inside and outside generously with salt and pepper. Stuff each quail with the chicken-liverwurst mixture and secure the openings with a toothpick. Tie the legs together with butcher’s string.
- 9
**Season and roast:**
- 10
In a small bowl, combine the mixed herbs and 1 tablespoon of butter. Season with salt and pepper, and spread it evenly all over the quails. Roast in the oven for 20 to 25 minutes or until golden brown and cooked through.
- 11
**Make the bourbon cream sauce:**
- 12
In a medium saucepan over medium heat, heat the olive oil until shimmering. Add the onion and cook until translucent, around 5 minutes. Stir in the minced garlic and cook until golden, about 2 minutes.
- 13
Pour in the chicken stock, wine, and tarragon. Bring to a simmer and cook until reduced by about a quarter, about 5 minutes.
- 14
Stir in the heavy cream and bourbon, seasoning to taste with salt and pepper. Cook, stirring occasionally, until thickened and creamy, about 3-4 minutes.
- 15
**Rest and serve:**
- 16
Allow the quails to rest for at least 10 minutes after roasting. Remove the toothpicks and string before serving.
- 17
Transfer the roasted quail to a plate, drizzle with the bourbon cream sauce, and enjoy your sumptuous meal!
A rich and flavorful twist on a classic dish, this recipe brings together the succulence of quail with a deliciously rich stuffing and a buttery bourbon sauce.
