Ingredients
Instructions
- 1
In a bowl, whisk together the eggs and season with salt, pepper, and mixed herbs.
- 2
Heat the olive oil or butter in a 20cm frying pan over medium heat.
- 3
Add the frozen peas, broccoli, and sweet potato chunks to the pan and sauté for about 5-7 minutes until they are heated through and beginning to soften.
- 4
Pour the whisked eggs over the vegetable mixture. If using, dollop ricotta cheese evenly across the top.
- 5
Reduce the heat to low and cook for about 8-10 minutes, gently lifting the edges of the frittata with a spatula to allow uncooked egg to flow underneath.
- 6
Once the edges are set but the center is still slightly wobbly, you can place the pan under the broiler for a couple of minutes to finish cooking the top, if desired.
- 7
Remove the frittata from the heat and let it sit for a few minutes to set before slicing.
This frittata is still packed with flavor and nutrients, making it a delightful option for any meal of the day!
