Ingredients
Instructions
- 1
**Marinate the Beef:**
- 2
In a large bowl, mix the yogurt, fine onion slices, ginger-garlic paste, green chilies, biryani masala, red chili powder, salt, lemon juice, mint, and coriander.
- 3
Add the beef pieces, ensuring they're well coated. Cover and marinate for at least 2 hours, or overnight for the best flavor.
- 4
**Cook the Rice:**
- 5
Rinse the basmati rice under cold water until the water runs clear to remove excess starch. Soak in water for about 30 minutes.
- 6
In a large pot, bring the water to a boil. Add the soaked rice, salt, bay leaves, cardamom, cloves, and cinnamon. Cook until the rice is about 70% cooked (it should still have a bite to it). Drain the rice and set aside.
- 7
**Cook the Beef:**
- 8
In a large heavy-bottomed pot, heat ghee or oil over medium heat. Add the marinated beef (discard leftover marinade) and cook until browned and juices have released (about 10-15 minutes).
- 9
Cover the pot and reduce heat, allowing the beef to cook in its juices until it's tender (about 45 minutes to 1 hour), stirring occasionally. Add a little water if needed.
- 10
**Layer the Biryani:**
- 11
Once the beef is cooked, reduce the heat to low. Spread half of the partially cooked rice over the beef. Then, layer the remaining rice on top. Drizzle saffron milk over the top if using.
- 12
Sprinkle fried onions, additional mint, and coriander leaves on top. Drizzle a little more ghee if desired.
- 13
**Dum Cooking:**
- 14
Cover the pot with a tight-fitting lid. You can use a heavy pan or a kitchen towel under the lid to trap steam.
- 15
Cook on low heat for about 30-40 minutes, allowing the flavors to meld. This is the “dum” process that makes biryani so delightful!
- 16
**Serve:**
- 17
Gently fluff the biryani before serving. Enjoy it with raita (yogurt sauce), salad, or just on its own!
This special biryani captures the essence of traditional, Pakistani, and Hyderabadi styles all in one delicious dish. It’s a labor of love, but oh, it is worth every bit of effort!
