These delightful enchiladas are sure to warm your soul! Combining seasoned meat, refried beans, and topped with a cheesy goodness, they’re perfect for a cozy dinner.
Preheat the Oven: Preheat your oven to 375°F (190°C).
Cook the Meat: In a large skillet, heat a tablespoon of butter over medium heat. Add the diced onion and cook until softened. Add the ground meat, chili powder, cumin, salt, and pepper. Cook until the meat is browned and cooked through.
Prepare the Filling: Stir in the refried beans and tomato paste into the meat mixture until well combined and heated through. If you want more spice, mix in sliced jalapeños or a dash of hot sauce.
Fill the Tortillas: Take each tortilla and spoon a generous amount of the meat and bean mixture down the center. Sprinkle a bit of cheddar cheese on top, then roll up the tortilla tightly. Place seam-side down in a greased baking dish.
Top with Cheese: Once all tortillas are filled and placed in the dish, sprinkle the remaining cheddar and mozzarella cheese on top.
