Sweet Potato and Garden Pea Soup

Ingredients

• 2 medium sweet potatoes, peeled and diced
• 2 cups garden peas (fresh or frozen)
• 2 cups vegetable broth (or water)
• 1-2 tablespoons extra virgin olive oil
• 1-2 garlic shoots, chopped (or garlic if you prefer)
• Salt, to taste
• Black pepper, to taste
• Fresh chilis, sliced (for some spice, optional)
• A squeeze of unwaxed lemon for brightness (optional)

Cooking Instructions

1. In a large pot, heat the extra virgin olive oil over medium heat.
2. Add the chopped garlic shoots and sauté for about 2-3 minutes until fragrant.
3. Add the diced sweet potatoes to the pot and stir well. Cook for about 5 minutes until they start to soften.
4. Pour in the vegetable broth (or water) and bring the mixture to a boil. Reduce to a simmer and cook for about 15 minutes or until the sweet potatoes are tender.
5. Add the garden peas to the pot and cook for an additional 5 minutes.
6. Using an immersion blender, carefully blend the soup until smooth and creamy. If you don’t have an immersion blender, you can blend it in batches using a regular blender.
7. Season with salt, black pepper, and add fresh chilis if desired.
8. Serve hot, and add a good squeeze of unwaxed lemon juice before serving for an extra zesty flavor.
