Bean and Rice Burritos

Backstory: This recipe is inspired by my time spent in Mexico, where I learned that simple ingredients can create incredible flavors. These bean and rice burritos are a budget-friendly and satisfying meal that will surely satisfy your taste buds.
Ingredients:
- 1 cup of cooked rice (white, brown, or Mexican rice)
- 1 tablespoon of oil
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- 1 can of black beans, drained and rinsed
- Salt and pepper to taste
- 4 large flour tortillas
- Toppings of your choice: shredded cheese, salsa, sour cream, guacamole, chopped tomatoes, etc.
Instructions:
- In a large skillet, heat the oil over medium heat. Add the diced onion and minced garlic. Sauté until the onion becomes translucent and fragrant.
- Add the cumin and chili powder to the skillet, stirring well to coat the onions and garlic. Cook for another minute to toast the spices.
- Add the cooked rice to the skillet and stir to combine with the onion and spice mixture. Cook for a few minutes, allowing the flavors to meld together.
- Add the black beans to the skillet and cook for another 3-4 minutes, until the beans are heated through. Season with salt and pepper to taste.
- Warm the flour tortillas by placing them on a dry skillet or in the microwave for a few seconds.
- Assemble the burritos by placing a scoop of the bean and rice mixture onto each tortilla, spreading it in a line down the center. Add your preferred toppings such as shredded cheese, salsa, sour cream, guacamole, or chopped tomatoes.
- Fold the sides of the tortilla over the filling and then roll it up tightly into a burrito.
- Optional: Heat a clean skillet over medium heat and lightly coat it with oil. Place each burrito seam-side down in the skillet and cook for 1-2 minutes until the tortilla is lightly browned and crispy. Flip and cook the other side as well.
- Serve the bean and rice burritos warm with additional toppings if desired.
