Heat vegetable oil in a large skillet or wok over medium heat.
Add the diced onion and minced garlic to the pan. Sauté until the onion becomes translucent and the garlic is fragrant.
Add the mixed vegetables to the pan and cook until they are heated through. If using frozen vegetables, they will quickly thaw and cook in just a few minutes.
Push the vegetables to the side of the pan and add the cooked rice to the other side. Break up any clumps of rice with a spatula.
Pour the soy sauce over the rice and mix well to evenly distribute the soy sauce and to coat the rice and vegetables. Stir-fry for a few more minutes until everything is heated through.
If desired, drizzle sesame oil over the fried rice and mix well to incorporate.
Season with salt and pepper to taste. Keep in mind that soy sauce already provides some saltiness, so adjust accordingly.
Remove the pan from heat and sprinkle chopped green onions over the fried rice for added freshness and flavor.
