Heat the skillet over medium-high and add the olive oil or butter. If using onion, add it and sauté until soft, about 3 minutes — breathe in that sweet smell, dear.
Add the ground beef, break it up with a spoon, and brown until no longer pink, about 4–5 minutes. Drain excess fat if it's very greasy.
Stir in the garlic (if using), grated carrot, and peas (or bell pepper). Cook 2 minutes until vegetables lose their raw edge.
Sprinkle in salt, pepper, and oregano. Stir in the tomato paste (or ketchup) and pour the broth — this keeps everything saucy and soft. Simmer uncovered 2–3 minutes so flavors marry.
Turn the heat to low and scatter the shredded cheese over the beef mixture. Cover the skillet for 1–2 minutes until cheese melts into a gooey blanket.
Taste and adjust seasoning. Serve right from the pan over rice, pasta, or with soft rolls for scooping — children love the cheesy scoop, I always say.
