Pat the chicken dry and season both sides with salt, pepper, and paprika if using — good seasoning makes all the difference, dear.
Warm a large skillet over medium-high heat. Add 1 tablespoon garlic butter and let it foam and smell fragrant.
Add the chicken fillets to the pan. Cook 4–5 minutes on the first side without moving so a golden crust forms.
Flip the fillets, add the remaining 1 tablespoon garlic butter spooned over the top, and cook another 4–5 minutes until the chicken reaches 165°F (74°C) or is no longer pink inside. If fillets are thick, lower heat to medium and cover for a couple minutes to finish through.
Remove chicken to a cutting board and let rest 3 minutes, then slice thinly against the grain.
Wipe the skillet lightly if there’s excess brown bits, then return to medium heat. Place one wrap in the pan, sprinkle a thin layer of cheese over half the wrap where the chicken will sit.
Arrange sliced chicken over the cheese, add a little more cheese on top so it melts over the chicken. Add greens or tomato if using.
Fold the wrap over (or fold sides and roll) to enclose the filling. Press gently with a spatula and cook 1–2 minutes per side until golden brown and cheese is fully melted. Brush a touch of garlic butter on the outside for extra flavor and color.
Remove, slice in half on the bias, and serve hot with a little extra buttered pan drizzle or your favorite sauce.
