Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add the chicken, season with pepper, and stir-fry for 5–7 minutes, until cooked through. Transfer it to a plate.
Add another tablespoon of oil. Cook the mushrooms for 3 minutes, then add the broccoli and 2 tablespoons of water. Cover for 2 minutes, until the broccoli is tender-crisp. Move the vegetables aside.
Add the remaining oil to the empty side of the pan. Pour in the eggs and gently scramble them until just set.
Add the cold rice, garlic, and ginger. Toss everything together, breaking up any clumps, and stir-fry for 3–4 minutes. Cold rice is the secret here, sweetheart—it keeps every grain separate.
Return the chicken to the pan. Add the soy sauce and sesame oil, if using, and toss for 2 minutes until hot and evenly seasoned.
Stir in the green onions and serve right away.
