This hearty and comforting chunky steak and potato soup is perfect for a cozy meal on a chilly day. The savory beef broth combined with tender steak and soft potatoes will surely warm you up from the inside out.
In a large pot, heat the olive oil over medium heat. Add the steak strips and cook until browned on all sides. Remove the steak from the pot and set aside.
In the same pot, add the chopped onion and sliced carrots. Cook for about 5 minutes until the vegetables begin to soften.
Add the minced garlic and cook for another minute until fragrant.
Pour in the beef broth and add the diced potatoes and dried thyme. Season with salt and pepper to taste.
Bring the soup to a boil, then reduce the heat to low. Let it simmer for about 20-25 minutes or until the potatoes are tender.
Add the cooked steak back into the pot and simmer for an additional 5 minutes to heat the steak through.
Taste and adjust the seasoning if needed. Serve hot, garnished with chopped fresh parsley.
