Creamy Tetrazzini with Basil Mozzarella and Mushrooms

Backstory: This creamy Tetrazzini combines the richness of heavy cream, the freshness of basil, and the earthy flavors of mushrooms to create a satisfying pasta dish. With a touch of bourbon, it adds a subtle depth of flavor that elevates this classic recipe.
Ingredients:
- 8 oz spaghetti or fettuccine
- 2 tablespoons butter
- 8 oz mushrooms, sliced
- 2 shallots, finely chopped
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/4 cup bourbon
- 1 cup vegetable broth
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh basil leaves
- 1 tablespoon chopped fresh rosemary
- Salt and black pepper to taste
- Fresh basil leaves, for garnish
Instructions:
- Cook the pasta in salted boiling water according to the package instructions. Drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the sliced mushrooms and cook until they release their moisture and turn golden brown, about 5-7 minutes. Remove the mushrooms from the skillet and set them aside.
- In the same skillet, add the chopped shallots and minced garlic. Sauté until they become translucent and fragrant, about 2-3 minutes.
- Pour in the heavy cream and bourbon. Increase the heat to medium-high and simmer for about 5 minutes, allowing some of the alcohol to cook off.
- Stir in the vegetable broth, shredded mozzarella cheese, and grated Parmesan cheese. Continue stirring until the cheese melts and creates a creamy sauce. Season with salt and black pepper to taste.
- Add the cooked pasta and cooked mushrooms back into the skillet. Stir everything together until well-coated with the sauce.
- Sprinkle in the chopped fresh basil leaves and chopped fresh rosemary. Give it a final toss.
- Serve the creamy Tetrazzini hot, garnished with fresh basil leaves.
