Fluffy Cinnamon Oat Waffles

Backstory: When you're craving a comforting breakfast but don't want to spend too much time in the kitchen, these cinnamon oat waffles come to the rescue! Fluffy, delicious, and with a hint of spice—utter perfection!
Ingredients:
- 67 g rolled oats
- 80 g all-purpose flour
- 33 g sugar (adjust to taste)
- 5 g baking soda (approximately 1 teaspoon)
- 2 g salt (approximately 1/3 teaspoon)
- 1 g ground cinnamon (approximately 1/3 teaspoon)
- 1 large egg (approximately 50 g)
- 267 ml milk (dairy or plant-based)
- 40 ml vegetable oil or melted butter
- 2.5 ml pure vanilla extract (approximately 1/2 teaspoon)
- 5 ml apple cider vinegar (approximately 1 teaspoon)
Cooking Instructions:
- Preheat your waffle iron according to the manufacturer's instructions.
- In a large bowl, combine the rolled oats, all-purpose flour, sugar, baking soda, salt, and ground cinnamon. Mix well.
- In another bowl, whisk together the egg, milk, vegetable oil (or melted butter), vanilla extract, and apple cider vinegar until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. If the batter is too thick, you can add a splash of milk to reach your desired consistency.
- Lightly grease the waffle iron with a bit of oil or cooking spray.
- Pour enough batter into the preheated waffle iron to cover the surface, and close it. Cook according to your waffle iron's instructions, usually about 3-5 minutes, until golden brown and crispy.
- Carefully remove the waffles and serve them warm with your favorite toppings—maple syrup, fresh fruit, or a dollop of yogurt works beautifully!
