Fold in chocolate (and nuts): Stir in the chopped chocolate or chips and nuts, if using. Scrape the bowl so chocolate is evenly distributed.
Chill the dough: Cover and chill the dough in the fridge for at least 30 minutes (up to 24 hours). Chilling firms the dough, concentrates flavor, and prevents excessive spreading — patience, dear, it's worth it.
Preheat oven and prepare pans: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
Portion the cookies: Use a 2-tablespoon scoop (or roughly 1.5 inches diameter) to place dough balls 2 inches apart on the baking sheet. For bigger cookies, use a 3-tablespoon scoop and increase bake time slightly.
Bake: Bake 10–12 minutes for 2-tablespoon cookies, until edges are golden brown and centers still look slightly underbaked — they will finish setting as they cool. Rotate pans halfway if your oven bakes unevenly.
Finish and cool: If you like, sprinkle a tiny pinch of flaky sea salt on each hot cookie. Let cookies cool on the pan 5 minutes, then transfer to a wire rack to cool completely.
Store: Keep in an airtight container at room temperature up to 4 days, or freeze dough balls for later baking.
