Preheat your oven to 350°F (175°C). If you're short on time, a 9-inch oven-safe skillet works nicely — otherwise use a small baking dish. Don't skimp on softening the cream cheese; it makes everything smooth as silk.
In a large bowl, beat the softened cream cheese until smooth. Mix in the sour cream and mayonnaise until creamy and combined.
Stir in 1/2–3/4 cup buffalo sauce (start smaller if you're timid about heat), Worcestershire sauce, garlic powder, onion powder, and a pinch of salt and pepper.
Fold in the shredded chicken, 3/4 cup of the shredded cheddar, and the blue cheese if using. Taste and adjust seasoning and heat — remember flavors meld as it bakes.
Transfer the mixture to your prepared baking dish or skillet and smooth the top. Sprinkle the remaining 1/4 cup cheddar over the top for a golden finish.
Bake for 18–20 minutes until bubbly and the top is lightly browned. For an extra toasty crust, pop it under the broiler 1–2 minutes — watch it closely, dear.
Remove from oven, let rest 3–5 minutes, then garnish with chopped green onions. Serve warm with celery, carrots, crackers, or toasted baguette slices.
