This rich and creamy Indian dessert is a delightful blend of carrots, milk, and sugar, spiced with fragrant cardamom and topped with crunchy nuts.
In a heavy-bottomed pan, heat ghee and add the grated carrots. Sauté the carrots on medium heat until they turn aromatic and start to soften.
Pour in the milk and let the mixture simmer on low heat, stirring occasionally, until the carrots are cooked and the milk has reduced significantly.
Add sugar and mix well. Continue to cook the halwa until it reaches a thick, pudding-like consistency.
Stir in the cardamom powder and saffron strands for added flavor.
In a separate small pan, roast the chopped nuts until golden and fragrant.
Once the carrot mixture has thickened, add the roasted nuts and raisins, if using, and mix well.
Serve the Carrot Halwa warm, garnished with more nuts on top for a lovely crunch!
