Pat the chicken thighs dry with paper towels (this helps the skin crisp). In a bowl, mix 2 tbsp olive oil, minced garlic, lemon zest, lemon juice, salt, pepper, paprika, rosemary, and thyme. Rub this mixture all over the thighs and under the skin where you can — a little secret that makes every bite flavorful.
Toss the prepared vegetables and onion with 1 tbsp olive oil (or melted butter), honey/maple syrup if using, and a pinch of salt and pepper. Spread them in an even layer on the baking sheet, leaving a bit of room for the chicken.
Nestle the chicken thighs skin-side up among the vegetables so juices mingle while roasting. Roast in the preheated oven for 35–45 minutes, until the chicken reaches 165°F (74°C) at the thickest part and the skin is golden and crisp. Stir the vegetables once halfway through for even browning.
If you'd like extra-crispy skin, switch the oven to broil for 2–3 minutes at the end — watch closely, dear, it goes from lovely to burnt fast.
Remove from oven and let the chicken rest 5 minutes. Scatter chopped parsley over everything and spoon any pan juices over the chicken before serving.
Serve warm with a simple green salad or steamed greens if you like — this pairs beautifully with a wedge of lemon for extra brightness.
