Herbed Bammy with Garlic and Rosemary

Backstory
This twist on the traditional Bammy infuses aromatic herbs and garlic, bringing a delightful depth of flavor while still honoring its Caribbean roots. Perfect paired with grilled fish or even as a standalone dish!
Ingredients
- 2 cups cassava flour (or finely grated cassava)
- 1 cup water (plus extra if needed)
- 1 teaspoon salt
- 1/2 teaspoon sugar (optional)
- 2-3 cloves garlic, minced
- 1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried rosemary)
- 1 tablespoon fresh thyme, finely chopped (or 1 teaspoon dried thyme)
- 2 tablespoons coconut oil or olive oil (for frying)
- 1 cup coconut milk (for serving)
- (Optional) Fresh herbs for garnish (rosemary or thyme)
Cooking Instructions

Prepare Cassava: If using fresh cassava, peel, wash, and grate finely. Squeeze out excess water using a clean cloth or cheesecloth. If using cassava flour, proceed to the next step.

Mix Ingredients: In a mixing bowl, combine cassava flour, salt, and sugar. Stir in the minced garlic, chopped rosemary, and thyme. Gradually add water, mixing until a smooth dough forms. If too dry, incrementally add more water until it holds together.

Shape the Bammy: Divide the dough into small balls (about 4-6). On a lightly floured surface, flatten each ball into a round disk about 1/4 inch thick.

Cook the Bammy: Heat the coconut oil or olive oil in a frying pan over medium heat. Fry each disk for 4-5 minutes on each side until golden brown and crispy. Keep an eye on them to avoid burning!

Prepare Coconut Milk: In a small saucepan, gently heat the coconut milk until warmed through.

Serve: Plate the herbed Bammy, making a small well in the center if desired. Drizzle the warm coconut milk over the Bammy. Garnish with fresh rosemary or thyme for a touch of elegance.
