Ingredients
- 2 pounds of beef stew meat, cut into 1-inch pieces
- 1 tablespoon olive oil (or any other cooking oil you prefer)
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 carrots, peeled and sliced into rounds
- 3 potatoes, peeled and diced
- 2 cups beef broth (low sodium)
- 1 cup water
- 1 tablespoon Worcestershire sauce (optional, low sodium)
- 2 bay leaves
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Fresh parsley for garnish (optional)
Cooking Instructions
- Prep the Beef: Pat the beef stew meat dry with paper towels. This helps in browning.
- Sear the Meat: In a large saucepan or Dutch oven, heat the olive oil over medium-high heat. Add the beef in batches, searing it until browned on all sides, about 5 minutes per batch. Remove the beef from the pot and set it aside.
- Sauté Vegetables: In the same pot, add the diced onion and garlic. Sauté until the onion becomes translucent, around 3-4 minutes.
- Combine Ingredients: Add the carrots, potatoes, seared beef, beef broth, water, bay leaves, black pepper, thyme, and rosemary to the pot. Stir well to combine everything.
- Slow Cook: Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for 6-8 hours, or until the beef is tender and the flavors meld together.
- Finish & Serve: Remove the bay leaves before serving. Garnish with fresh parsley if you like, and enjoy your hearty stew!
