Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set this dry mixture aside.
In a separate large bowl, cream together the softened butter and granulated sweetener until light and fluffy. You can use an electric mixer or beat by hand with a wooden spoon.
Add the unsweetened applesauce, apple juice, and vanilla extract to the creamed butter mixture. Mix until well combined.
Gradually add the dry mixture into the butter mixture. Stir until just combined. Avoid over mixing, as this can lead to tough cookies.
Fold in the finely chopped dried apples or apple chips, distributing them evenly throughout the cookie dough.
Scoop rounded tablespoons of the dough and place them onto the prepared baking sheet, spacing the cookies about 2 inches apart. You can use a cookie scoop or your hands for this.
Flatten each cookie slightly with the back of a spoon. This will ensure even baking and a nice shape.
Bake the cookies in the preheated oven for 12-15 minutes, or until they turn slightly golden around the edges.
Once done, remove the baking sheet from the oven and let the cookies cool for a few minutes. Then transfer them to a wire rack to cool completely.
