Milk Chocolate and Kiwi Mug Cake

Ingredients:
- 4 tablespoons oat flour
- 2 tablespoons rice flour
- 1 tablespoon cocoa powder
- 1/4 teaspoon baking powder
- Pinch of salt
- 2 tablespoons maple syrup
- 3 tablespoons non-dairy milk (such as almond or soy milk)
- 1/2 teaspoon vanilla extract
- 1/2 kiwi, peeled and diced
- 1 tablespoon milk chocolate chips (or chopped milk chocolate)
Instructions:
- In a microwave-safe mug, whisk together the oat flour, rice flour, cocoa powder, baking powder, and salt until well combined.
- Add the maple syrup, non-dairy milk, and vanilla extract to the mug. Stir until you have a smooth batter.
- Gently fold in the diced kiwi and milk chocolate chips.
- Place the mug in the microwave and cook on high for 1 minute and 30 seconds to 2 minutes, or until the cake has risen and set in the center. Cooking time may vary depending on your microwave, so keep an eye on it.
- Carefully remove the mug from the microwave (it will be hot) and let it cool for a minute or two.
- Optionally, you can garnish the cake with additional diced kiwi and a sprinkle of cocoa powder before serving.
