Moroccan Spiced Roast Lamb Leg

Ingredients:
- 1 leg of lamb (approximately 4-5 pounds)
- 4 cloves of garlic, minced
- 2 tablespoons olive oil
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon ground paprika
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon ground turmeric
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Juice of 1 lemon
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
Instructions:
- Preheat your oven to 325°F (160°C).
- In a small bowl, combine the minced garlic, olive oil, cumin, coriander, paprika, cinnamon, ginger, turmeric, salt, and black pepper to create a spice paste.
- Score the lamb leg lightly with a sharp knife, creating shallow cuts on the surface. This will help the flavors penetrate the meat.
- Rub the spice paste all over the lamb leg, massaging it into the cuts and making sure it is well coated.
- Place the lamb leg in a roasting pan and squeeze the lemon juice over it. Cover the pan with foil.
- Place the roasting pan in the preheated oven and roast for approximately 3 to 3.5 hours, or until the lamb is tender and cooked to your desired level of doneness. For medium-rare, aim for an internal temperature of 145°F (63°C). Remember to remove the foil for the last 30 minutes of cooking to allow the surface to brown.
- Once cooked, remove the lamb leg from the oven and let it rest for about 15 minutes before carving.
- Sprinkle the chopped cilantro and mint over the roasted lamb leg before serving.
- Slice the lamb thinly, and drizzle any pan juices over the slices. Serve with couscous or roasted vegetables for a complete Moroccan-inspired feast.
