Ingredients:
For the Lemon Herb Halibut:
- 4 halibut fillets (6-8 oz each), skin removed
- Zest of 1 lemon
- Juice of 1 lemon
- 2 cloves of garlic, minced
- 2 tablespoons of fresh parsley, chopped
- 2 tablespoons of fresh dill, chopped
- Salt and black pepper
- Olive oil
- Lemon slices for garnish
For the Roasted Vegetables:
- 1 large zucchini, sliced
- 1 large yellow squash, sliced
- 1 red bell pepper, sliced
- 1 red onion, sliced
- 2 tablespoons of olive oil
- 1 teaspoon of dried thyme
- Salt and black pepper to taste
Instructions:
- Preheat your oven to 400°F (200°C).
- In a small bowl, combine the lemon zest, lemon juice, minced garlic, chopped parsley, chopped dill, salt, and black pepper to create a marinade for the halibut fillets.
