Heat a large skillet over medium and add the olive oil. Sauté the chopped onion 3–4 minutes until soft and translucent — this builds the base flavor.
Add the garlic and cook 30 seconds, then add the ground turkey. Break it up and brown about 4–5 minutes until no longer pink.
Stir in the tomato paste, smoked paprika, oregano, (optional coriander), red pepper flakes (if using), and a generous pinch of salt and pepper. Cook 1 minute to toast the spices.
Add the diced tomatoes and corn, stir, and simmer 3–4 minutes until heated through and saucy. Taste and adjust seasoning; a little lemon juice or a splash of soy sauce can brighten and deepen flavor if needed.
Finish with chopped parsley or cilantro and top with cheese or avocado if you like. Serve over rice, pasta, in tortillas, or with crusty bread.
