Season the pork with salt, pepper, and Italian seasoning. If you have a few extra minutes, sear it in olive oil over medium-high heat until browned on all sides; this adds wonderful flavor, though you may skip it.
Place the pork in the slow cooker. Add the garlic, sun-dried tomatoes, broth, and red pepper flakes.
Cover and cook on **low for 3–4 hours**, or until the pork reaches 145°F in the center. Pork loin is lean, so don't let it cook all day or it may turn dry.
Transfer the pork to a cutting board and rest it for 10 minutes.
Stir the cream and Parmesan into the hot cooking liquid. Add the spinach, cover, and let it wilt for 5 minutes. Don't boil the cream, dear, or it can become grainy.
Slice the pork and serve it with the Tuscan sauce spooned over top. Finish with fresh parsley.
