In a large bowl, whisk together flour, cornstarch, sugar, baking powder, baking soda, and salt. The cornstarch is my little trick — it makes the crumb so tender and helps them stay soft longer.
In another bowl, whisk the buttermilk (or thinned yogurt), eggs, oil (or melted butter), and vanilla until smooth.
Make a well in the dry ingredients and pour in the wet mixture. Stir gently with a spatula until mostly combined — a few small lumps are fine. Overmixing wakes up the gluten and makes waffles chewy; be gentle, dear.
Fold in the crushed boudoir pieces and chocolate chips. The boudoir bits should be in small chunks so they soften into the batter and create that pillowy texture.
Let the batter rest 5 minutes. This relaxes the flour and gives the baking powder a head start — another small secret for a tender waffle.
Lightly oil or spray the waffle iron. Cook waffles according to your iron’s instructions until golden. For softer waffles, remove just as steam slows (don’t wait until they're rock-hard). Brush very lightly with melted butter if you like the flavor.
To store for softness: cool on a rack for 5–10 minutes, then place in an airtight container or zip-top bag. If stacking, put parchment between waffles. They keep soft in the fridge for 3–4 days.
To reheat and revive softness: wrap waffles singly in paper towel and microwave 20–30 seconds, or reheat in a 325°F (160°C) oven for 6–8 minutes wrapped loosely in foil. A quick 10–15 second zap after oven warming restores a touch of steam and tenderness.
Freezing: freeze in a single layer on a tray until solid, then transfer to a bag. Reheat from frozen in a 350°F (175°C) oven 10–12 minutes (foil-wrapped first 6 minutes if you prefer extra softness), or toast gently and finish with a 10–15 second microwave touch.
