This fragrant and spicy curry showcases the robust flavors of spices, complemented by the nutritious soybeans, making it a perfect companion for rice, chapathi, or naan.
Sauté Spices: In a pan, heat the oil over medium heat. Add mustard seeds and let them splutter. Then add chopped onions and sauté until they turn golden brown.
Add Ginger-Garlic and Chillies: Stir in the ginger-garlic paste (if using) and slit green chillies. Cook for a minute until fragrant.
Add Tomatoes: Add the chopped tomatoes and cook until they soften and begin to break down, becoming saucy, about 5-7 minutes.
Spice It Up: Add turmeric powder, red chilli powder, coriander powder, and salt to the tomato mixture. Mix well and let it cook for another 2-3 minutes.
Add Soybeans: Stir in the cooked soybeans, mixing them well with the spice mixture. Pour in water to reach your desired consistency. Let it simmer for about 10 minutes, allowing the soybeans to absorb the flavors.
Finish with Garam Masala: If using, sprinkle garam masala at the end and mix well. Cook for a couple more minutes.
Garnish and Serve: Garnish with fresh curry leaves and coriander leaves if desired. Serve hot with rice or chapathi.
