This delicious pasta dish is packed with flavor, thanks to the addition of black beans and a few spicy spices.

Ingredients

• 1 pound pasta
• 1 tablespoon olive oil
• 1 onion, diced
• 4 garlic cloves, minced
• 1 can black beans, drained and rinsed
• 1 teaspoon ground cumin
• 1/2 teaspoon chili powder
• 1/4 teaspoon cayenne pepper
• Salt and black pepper, to taste
• 1/2 cup grated cheddar cheese
• Fresh cilantro, chopped, for garnish

Instructions

1. Cook the pasta according to the package directions. Reserve 1 cup of the pasta cooking water before draining the pasta.
2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
3. Add the black beans, cumin, chili powder, cayenne pepper, salt, black pepper, and 1/2 cup of the reserved pasta cooking water to the skillet. Cook for 5 minutes, or until heated through and slightly thickened.
4. Add the cooked pasta to the skillet and toss to combine. Top with the grated cheddar cheese and fresh cilantro.

Cheesy Baked Pasta

This creamy and cheesy pasta dish is a perfect comfort food. It's great for leftovers too!

Ingredients

• 1 pound pasta
• 4 tablespoons butter
• 4 tablespoons flour
• 3 cups milk
• 2 cups grated cheddar cheese
• Salt and black pepper, to taste
• 1/2 teaspoon Italian seasoning
• 1/2 teaspoon smoked paprika
• 1/4 teaspoon cayenne pepper
• 1 can white beans, drained and rinsed
• Fresh parsley, chopped, for garnish

Instructions

1. Cook the pasta according to the package directions. Drain and set aside.
2. Preheat the oven to 375°F/190°C.
3. In a medium saucepan, melt the butter over medium heat. Add the flour and whisk to combine. Cook for 1-2 minutes.
4. Gradually whisk in the milk, making sure there are no lumps. Cook until the sauce has thickened, about 5-7 minutes.
5. Add the grated cheddar cheese, salt, black pepper, Italian seasoning, smoked paprika, cayenne pepper, and white beans to the sauce. Stir to combine.
6. Add the cooked pasta to the sauce and stir until the pasta is coated.
7. Transfer everything into a baking dish and top with more grated cheddar cheese.
8. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
9. Garnish with freshly chopped parsley.
