Spicy Cajun Pasta with Black Beans and Cheese

This recipe uses Cajun seasoning to add a spicy kick to creamy pasta and black beans.
Ingredients
- 12 oz pasta
- 1 can black beans, drained and rinsed
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 tsp cajun seasoning
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add onion, garlic, red and green bell peppers and cook for 5-7 minutes until the vegetables are tender.
- Add black beans and cajun seasoning to the skillet and cook for 2-3 minutes.
- Add cooked pasta to the skillet and stir to combine.
- Pour in heavy cream and stir until the pasta is well coated.
- Add shredded cheddar cheese to the skillet and stir until the cheese is melted.
- Serve hot and enjoy!
