Spicy Paprika Ramen with Herb Mayo

Ingredients:
- 2 packs of ramen noodles (discard the seasoning packets)
- 2 tablespoons vegetable oil
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (adjust to your desired level of spiciness)
- 1/2 teaspoon black pepper
- 1 cup grated cheese (such as cheddar or mozzarella)
- 2 tablespoons ketchup
- 1/4 cup mayonnaise
- 1/2 teaspoon dried parsley
- 1/2 teaspoon dried dill
- Salt to taste
Instructions:
- Cook the ramen noodles according to the package instructions, but exclude the included seasoning packets. Drain and set aside.
- In a large pot or wok, heat vegetable oil over medium heat.
- Add paprika, cayenne pepper, and black pepper to the pot. Stir for about 30 seconds to release their flavors.
- Add the cooked ramen noodles to the pot and toss them with the seasoned oil until well coated.
- Sprinkle the grated cheese over the noodles and cover the pot. Let it cook for a couple of minutes until the cheese has melted.
- In a small bowl, mix together ketchup, mayonnaise, dried parsley, and dried dill to make the herb mayo sauce.
- Add the herb mayo sauce to the pot and stir it into the noodles until well combined. Make sure all the noodles are coated with the sauce.
- Taste and season with salt if needed.
- Divide the spicy paprika ramen into serving bowls.
- Optional: Garnish with a sprinkle of additional paprika or cayenne pepper for added heat and presentation.
