Spicy Scorpion Pepper Shrimp StirFry

Ingredients:
- 1 pound large shrimp, peeled and deveined
- 2 scorpion peppers, finely chopped (adjust according to your tolerance)
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced
- 1 cup snap peas, ends trimmed
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon honey
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- Salt and black pepper, to taste
- Fresh cilantro, for garnish
Instructions:
- In a small bowl, whisk together soy sauce, oyster sauce, honey, and cornstarch. Set aside.
- Heat 1 tablespoon of vegetable oil in a large pan or wok over high heat.
- Add the minced garlic and chopped scorpion peppers to the pan. Sauté for about 30 seconds until fragrant, being cautious of the chili fumes.
- Remove the garlic and peppers from the pan, and set aside.
- In the same pan, heat another tablespoon of vegetable oil over high heat.
- Add the shrimp to the pan and cook for 2-3 minutes until they turn pink and opaque. Remove them from the pan and set aside.
- In the same pan, add the sliced bell peppers, onion, and snap peas. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.
- Return the garlic and peppers to the pan and pour the sauce mixture over the ingredients. Stir-fry for another minute until the sauce thickens and coats the vegetables evenly.
- Add the cooked shrimp back to the pan and toss everything together for a final minute to heat through.
- Season with salt and black pepper to taste.
- Remove from heat and garnish with fresh cilantro.
