Heat the oven to 350°F. Grease and flour a 9x5-inch loaf pan, or line it with parchment. A well-prepared pan is the secret to a clean release, dear.
Beat the butter and sugar substitute for 3–4 minutes, until pale and fluffy. Don’t rush this step—it gives the cake its lift.
Beat in the eggs one at a time, then mix in the vanilla.
Whisk together the flour, baking powder, and salt. Add the dry ingredients to the butter mixture in three additions, alternating with the milk. Mix just until combined; overmixing makes pound cake heavy.
Spread the batter into the pan and smooth the top. Bake for 50–60 minutes, until golden and a toothpick inserted in the center comes out clean.
Cool in the pan for 15 minutes, then transfer to a rack to cool completely before slicing.
