In a large bowl, combine the oats, sunflower seeds, granulated sugar, cinnamon, and salt. Toss so the sugar and spices are evenly distributed.
In a small bowl, whisk together the oil, date syrup, and vanilla until smooth. This adds flavor and a little moisture; we won't rely on it for the primary structure because the egg whites will do the binding.
In a clean, grease‑free bowl, beat the egg whites to soft‑stiff peaks. You want them glossy and able to hold a peak but not dry. Gently fold a couple of tablespoons of the oat mixture into the whites to lighten them, then carefully fold in the rest until the dry mix is evenly coated. Work gently to keep the whites airy — that’s what makes clusters.
Fold the oil/date syrup mixture into the oat-and-white mixture until evenly combined. The mixture should be moist but not wet; add a teaspoon more oil if it seems too dry.
Spread the granola mixture in an even layer on the prepared sheet, pressing down gently with the back of a spatula if you like bigger clusters.
Bake 25–30 minutes, stirring once halfway through (if you prefer large clusters, stir very gently or only once). Keep an eye during the last 5 minutes — the granola should be deep golden and dry to the touch. Egg‑white granola crisps as it cools, so remove when golden and not soggy.
Let cool completely on the baking sheet without disturbing for best clumps. Once cooled, fold in the dried fruit if using.
Store in an airtight container at room temperature for up to 2 weeks. If it softens, spread on a baking sheet and re‑toast at 300°F (150°C) for 5–8 minutes to refresh the crunch.
Tips from my kitchen: Using room‑temperature egg whites whips better; don't overbeat them to dryness. Date syrup gives that rich molasses note—add a touch more if you like it deeper. If you ever want a chewier bite, reserve 2 tablespoons of date syrup to drizzle over the cooled granola and toss gently.
