Tempura Lobster with Colorful Vegetable Medley

Ingredients:
- 2 fresh lobster tails
- Vegetable oil, for deep frying
For the tempura batter:
- 1 cup all-purpose flour
- 1/4 cup cornstarch
- 1 teaspoon baking powder
- 1 cup ice-cold water
For the vegetable medley:
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 orange bell pepper, sliced
- 1 small red onion, sliced
- 1 medium carrot, cut into thin strips
- 1 cup broccoli florets
- 1 cup snap peas, trimmed
- 1 tablespoon vegetable oil
For the dipping sauce:
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey
- 1 teaspoon grated ginger
- 1 teaspoon sesame oil
- 1 tablespoon chopped green onions (optional)
Cooking Instructions:

Prepare the tempura batter by combining the all-purpose flour, cornstarch, and baking powder in a bowl. Whisk in the ice-cold water until the batter is smooth. Set aside.

Prepare the dipping sauce by whisking together the soy sauce, rice vinegar, honey, grated ginger, sesame oil, and chopped green onions in a small bowl. Set aside.

Using a sharp knife or kitchen shears, carefully remove the lobster meat from the shells. Cut the lobster meat into bite-sized pieces.
