Teriyaki Beef and Broccoli StirFry

Description: This Teriyaki Beef and Broccoli Stir-Fry is a delicious and diabetes-friendly meal. It features tender strips of beef, crisp broccoli, and a homemade teriyaki sauce made with low-sodium soy sauce and a touch of honey. Serve it over brown rice for added fiber and a lower glycemic index.
Ingredients:
- 1 lb (450g) lean beef, thinly sliced (GI: 0)
- 2 cups broccoli florets (GI: 15)
- 1 tablespoon vegetable oil (GI: 0)
- 2 cloves garlic, minced (GI: 0)
- 1 teaspoon grated ginger (GI: 0)
- 1/4 cup low-sodium soy sauce (GI: 15)
- 2 tablespoons water (GI: 0)
- 1 tablespoon honey (GI: 55)
- 1 tablespoon cornstarch (GI: 95)
- 1/4 teaspoon red pepper flakes (optional, GI: 0)
- Cooked brown rice, for serving (GI: 50)
Cooking Instructions:
- In a small bowl, whisk together the low-sodium soy sauce, water, honey, cornstarch, and red pepper flakes (if desired). Set the teriyaki sauce aside.
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the beef to the skillet and cook for 2-3 minutes until browned. Remove the beef from the skillet and set aside.
- In the same skillet, add the minced garlic and grated ginger. Stir-fry for 1 minute until fragrant.
- Add the broccoli florets to the skillet and stir-fry for 3-4 minutes until crisp-tender.
- Return the cooked beef to the skillet and pour in the teriyaki sauce. Stir everything together to coat the beef and broccoli with the sauce.
- Cook for 1-2 minutes until the sauce has thickened and the beef is heated through.
- Remove from heat and serve the Teriyaki Beef and Broccoli Stir-Fry over cooked brown rice.
