Vegan Citrus Shortbread Cookies

Ingredients

• 1 1/2 cups all-purpose flour
• 1/2 cup powdered sugar
• 1/2 teaspoon salt
• Zest of 1 lemon or orange (whichever you prefer)
• 1/2 cup vegan butter, softened
• 1 tablespoon freshly squeezed lemon or orange juice
• Extra powdered sugar, for dusting (optional)

Instructions

1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
2. In a medium-sized bowl, whisk together the all-purpose flour, powdered sugar, salt, and citrus zest until well combined.
3. Add the softened vegan butter and freshly squeezed citrus juice to the dry ingredients. Use a fork or your hands to mix everything together until a crumbly dough forms.
4. Transfer the dough onto a clean surface and gently knead it a few times to bring it together into a smooth ball.
5. Roll out the dough to about 1/4 inch thickness using a rolling pin. If the dough is sticking, you can lightly dust the surface and rolling pin with flour.
6. Cut out desired shapes using cookie cutters and carefully transfer them to the prepared baking sheet, leaving a little space between each cookie.
7. Bake the cookies in the preheated oven for about 12-15 minutes, or until the edges are lightly golden brown.
8. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes. Then, transfer them to a wire rack to cool completely.
9. Optional: Dust the cooled cookies with powdered sugar for an extra touch of sweetness.
