This Vegetarian Chili is packed with flavor and loaded with beans, vegetables, and spices. It’s perfect for a cozy dinner and can be made in one pot, making cleanup a breeze!
Sauté the Aromatics: In a large pot, heat a drizzle of olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent.
Add the Vegetables: Stir in the chopped green bell pepper and jalapenos (if using). Sauté for another 5 minutes until the peppers soften.
Combine the Ingredients: Add the chickpeas, black beans, crushed tomatoes, diced tomatoes, corn, mixed veggies, chili powder, cumin, oregano, salt, and pepper. Stir well to combine.
Simmer: Bring the chili to a gentle boil, then reduce the heat to low. Let it simmer for about 20-30 minutes to allow the flavors to meld together. If it becomes too thick, add some vegetable broth to reach your desired consistency.
