Wild Mushroom and Red Wine Sauce

This savory and rich sauce is perfect for drizzling over steaks, poultry, or even pasta for a gourmet touch. This recipe serves 4 people.
Ingredients:
- 30ml olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 250g mixed wild mushrooms, sliced
- 240ml red wine
- 240ml vegetable or mushroom broth
- 30ml balsamic vinegar
- 15ml soy sauce
- 30ml fresh thyme leaves
- Salt and pepper to taste
- 30g vegan butter (optional for added richness)
Instructions:
- Heat olive oil in a large saucepan over medium heat.
- Add the chopped onion and garlic, sauté until fragrant and translucent.
- Add the sliced wild mushrooms and cook until they start to brown and release their juices.
- Pour in the red wine and simmer until it reduces by half, stirring occasionally.
- Add the vegetable or mushroom broth, balsamic vinegar, soy sauce, and fresh thyme leaves. Stir to combine.
- Allow the sauce to simmer and reduce until it reaches your desired consistency.
- Season with salt and pepper to taste.
- If desired, stir in vegan butter at the end to add a luxurious finish to the sauce.
- Remove from heat and serve drizzled over your favorite protein or pasta dish.
