Zucchini and Cheese Casserole

This delicious casserole uses sliced zucchini in place of cauliflower and is made with a creamy almond milk-based sauce. The dish is loaded with veggies, perfect for a diabetic-friendly diet.
Ingredients:
- 3 medium zucchinis, sliced into thin rounds (GI: 15)
- 1 large onion, chopped (GI: 15)
- 1 tablespoon olive oil (GI: 0)
- 1/2 teaspoon garlic powder (GI: 0)
- 1/2 teaspoon dried oregano (GI: 0)
- 1/2 teaspoon dried basil (GI: 0)
- 2 tablespoons unsalted butter (GI: 0)
- 2 tablespoons all-purpose flour (GI: 85)
- 2 cups unsweetened almond milk (GI: 0)
- 1/2 cup grated Parmesan cheese (GI: 0)
- 1/2 cup grated cheddar cheese (GI: 0)
- Salt and pepper to taste (GI: 0)
Cooking Instructions:
- Preheat your oven to 375°F (190°C) and grease an 8-inch square baking dish.
- In a large pan, heat the olive oil, garlic powder, dried oregano, and dried basil over medium heat. Cook for 1-2 minutes until fragrant.
- Add the chopped onion and cook for 3-4 minutes until it becomes tender.
- Add the sliced zucchini and cook for an additional 5-7 minutes until the zucchini is tender but not mushy.
- While the veggies are cooking, melt butter in a separate pan over medium heat. Once the butter is fully melted, whisk in flour and cook for 1-2 minutes until golden brown. Gradually add the almond milk stirring constantly and cook until it thickens. Add in Parmesan cheese, cheddar cheese, salt, and pepper. Keep stirring the cheese sauce over low heat until the cheese has melted and the sauce is smooth and creamy.
- Combine the cooked veggies and cheese sauce in the greased baking dish. Stir well to mix and coat the vegetables.
- Bake the casserole for 20-25 minutes, or until the top is golden and bubbly.
- Let the casserole rest for 5-10 minutes before serving.
