A simple and nutritious flatbread made with almond flour, perfect for pairing with curries and vegetables.
Ingredients
- 1 cup almond flour (GI: 10)
- 1/4 cup coconut flour (GI: 10)
- 1/2 teaspoon salt (GI: 0)
- 1/2 teaspoon cumin powder (optional, GI: 0)
- Water, as needed (GI: 0)
Instructions
- In a mixing bowl, combine almond flour, coconut flour, salt, and cumin powder.
- Gradually add water to form a soft dough.
- Divide the dough into small balls and flatten each ball between two pieces of parchment paper or plastic wrap to form thin rotis.
- Heat a skillet over medium heat. Cook each roti for about 1-2 minutes on each side until lightly browned and cooked through.
- Serve warm with your favorite curry or vegetables.
2. Almond Flour Paneer Tikka
A flavorful snack made with almond flour and paneer, marinated in spices and grilled or baked to perfection.
Ingredients
- 1 cup paneer cubes (GI: 0)
- 1/4 cup almond flour (GI: 10)
- 1/4 cup yogurt (GI: 6)
- 1 teaspoon tandoori masala (GI: 0)
- 1 teaspoon ginger-garlic paste (optional, GI: 0)

Instructions
- In a bowl, mix yogurt, tandoori masala, ginger-garlic paste, and salt.
- Add paneer cubes and coat them well with the marinade. Allow it to marinate for 30 minutes.
- Preheat your oven or grill. Coat the paneer cubes with almond flour.
- Skewer the paneer and vegetables, and grill or bake at 400°F (200°C) for about 15-20 minutes until golden and cooked.
- Serve hot with mint chutney.
