1 Besan Ladoo Sweet Treat

A healthy version of the traditional Indian sweet made with roasted gram flour and a natural sweetener.
Ingredients
- 1 cup roasted besan (GI: 10-15)
- 1/4 cup almond or coconut flour (GI: 10)
- 1/4 cup natural sweetener (like stevia or erythritol) (GI: varies)
- 1/4 cup melted ghee or coconut oil (GI: 0)
- 1/2 teaspoon cardamom powder (GI: 0)
- Chopped nuts for garnishing (optional) (GI varies)
Instructions
- In a pan, heat ghee or coconut oil on low heat.
- Add roasted besan and almond or coconut flour, stirring continuously to avoid burning, until the mixture turns golden brown.
- Remove from heat and mix in the sweetener and cardamom powder.
- Allow the mixture to cool slightly. Shape into small balls (ladoos) while it's still warm.
- Garnish with chopped nuts if desired.
2. Besan Vegetable Pakoras
Crispy, savory fritters made with besan and a mix of vegetables, great for snacking.
Ingredients
- 1 cup besan (GI: 10-15)
- 1/2 cup finely chopped vegetables (e.g., onions, spinach, cauliflower) (GI varies depending on the vegetable)
- 1/2 teaspoon cumin seeds (GI: 0)
- 1/2 teaspoon turmeric powder (GI: 0)
- 1/2 teaspoon red chili powder (optional, GI: 0)
- Salt, to taste (GI: 0)

- Cooking oil for frying (GI: 0)
Instructions
- In a mixing bowl, combine besan, chopped vegetables, cumin seeds, turmeric powder, red chili powder, and salt.
- Add water gradually to form a thick batter.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the batter into the hot oil and fry until golden brown and crispy, about 4-5 minutes on each side.
- Drain on paper towels and serve hot.
3. Besan Methi Thepla
A spiced flatbread made with besan and fenugreek leaves, excellent for breakfast or as a snack.
Ingredients
- 1 cup besan (GI: 10-15)
- 1/2 cup whole wheat flour (optional, GI: 55)
- 1 cup fresh fenugreek leaves (methi), finely chopped (GI: 0)
