1 Spicy Chicken Ramen

Description
A warm and spicy ramen dish with chicken, mushrooms, and baby bok choy. The perfect combination of spicy and savory!
Ingredients (with Glycemic Index):
- 2 tbsp vegetable oil (GI = 0)
- 1 small onion, chopped (GI = 10)
- 4 garlic cloves, minced (GI = 0)
- 1 tbsp fresh ginger, grated (GI = 0)
- 1/2 cup low sodium soy sauce (GI = 0)
- 1/2 cup rice vinegar(GI = 56)
- 1/4 cup Sriracha (GI = 35)
- 1 quart reduced-sodium chicken broth (GI = 0)
- 1/2 lb. boneless chicken thighs, sliced thin (GI = 0)
- 8 oz shitake mushrooms, stemmed and sliced thin (GI = 11)
- 4 baby bok choy, ends trimmed and chopped (GI = 0)
- 2 soft boiled eggs (GI = 0)
- 1 pack ramen noodles (GI = 48)
Cooking Instructions
- In a large pot over medium heat, heat the vegetable oil.
- Add onion and cook until translucent, about 5 minutes.
- Add garlic and ginger and cook for another minute
- Add soy sauce, rice vinegar, and sriracha to the pot and bring to a simmer.
- Add chicken broth and bring to a boil.
- Add chicken and mushrooms and cook for 5 minutes or until chicken is cooked through.
- add baby bok choy and cook for two minutes
- In a separate pot, cook ramen noodles according to package directions.
- Divide noodles between two bowls and ladle broth and chicken with veggies over noodles.
- sprinkle sliced green onion, sesame seeds and chili flakes over each bowl and serve with soft boiled eggs if you like.
