Ingredients
- 1 lb ground chicken
- 1 cup walnuts, finely chopped
- 2 tablespoons chia seeds
- 2 large eggs
- ½ cup grated Parmesan cheese
- ½ cup free breadcrumbs
- 1 cup Rice Krispies
- 1 medium carrot, grated
- 1 teaspoon sea salt
- ½ teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- Extra virgin olive oil for drizzling
Cooking Instructions
-
Prepare the Ingredients:
- Preheat your copper electric skillet over medium heat.
- In a large mixing bowl, combine the ground chicken, chopped walnuts, chia seeds, Parmesan cheese, eggs, free breadcrumbs, Rice Krispies, grated carrot, salt, pepper, dried oregano, and smoked paprika.
-
Mix Well:
- Using your hands, mix until everything is evenly combined, without overmixing to maintain the meatball's tenderness.
-
Form the Meatballs:
- Roll the mixture into golf ball-sized meatballs, packing them gently to hold their shape.
-
Sear the Meatballs:
- Lightly drizzle the skillet with extra virgin olive oil.
- Place the meatballs in batches, ensuring space between them. Sear for 2-3 minutes on each side until golden brown.
-
Cook Thoroughly:
- After searing, reduce the heat to low, cover, and let them cook for about 10-15 minutes or until they reach an internal temperature of 165°F (75°C).
-
Serve:
- Remove the meatballs from the skillet and let them rest for a few minutes. Add another drizzle of olive oil for extra flavor if you like!
Flavor Profile
These meatballs have a rich, nutty flavor from the walnuts, complemented by the slight sweetness of grated carrots and enhanced by the warm spices. The Rice Krispies provide a delightful crunch that makes each bite satisfying.
